As with all Indian food it is a bit of a faff on but as usual worth the effort.
Basically, you soak your chickpeas (the Chole) overnight then pressure cook them with a couple of tea bags thrown in. These turn the chickpeas a dark brown. Then you cook onions and tomatoes and add your aromatic spices, including dried mango powder and pomegranate seeds.
